Momma’s Hidden Veggie Meatloaf

Many foods can be super versatile as we all know. Meatlof is one of the few fully prepared dishes that can be eaten as prepared, made into a sandwich, scramble, or even into a hash. I am all for sneaking in veggies anyway I can. Which if you’ve followed me for long, you know how I love to hide veggies in my food.

Here is my take on my momma’s meatloaf recipe! I hope you enjoy!

What You Will Need:

2lbs Hamburger

2lbs Turkey Burger

1/2 White Onion, Chopped

1 Medium Sweet Potato, Grated

1/2 Cup Quick Oats Oatmeal

1 Cup of Ketchup

2-3 Tbsps Brown Sugar

Paprika, Salt, and Pepper to taste

How To Do It:

Put grated sweet potato, chopped onion, quick oats and seasoning in a bowl and mix.

Add meat and mix, mix, mix… your hands are going to get nasty… but it will be worth it! Mixing it well is key!

To change things up, I decided to bake it in my cast iron skillet instead of a loaf pan. BEST IDEA EVER!

Bake at 375° until any liquid coming out is clear. It took approximately 2.5-3 hours to fully cook mine but cooking time can vary depending on the pan used.

Mix ketchup, brown sugar and paprika once the meatloaf is cooked. Pull the meatloaf out of the oven and slather on the ketchup mixture. Turn the oven to broil and place the pan back in. Broil until it gets bubbly.

Don’t get distracted playing with a cute baby and let the topping get a bit black. It happened. I may have cried a little since I was taking pictures for this post. However, it was real life so I am still showing you the end product… after I scraped the usually yummy, now burnt topping off. It was still delicious and was gone by the next day!
